2 oz Freeland Old Tom Gin
2 oz Rodeo Royale
top with 2-3 oz champagne or sparkling water

For a French 75 variation:
Shake the gin and mixer for 5 seconds. Strain into a flute glass and top with chilled champagne or prosecco. Garnish with fresh mint.
For a Tom Collins variation:
Build ingredients in a Collins glass. Top with sparkling water & ice. Garnish with fresh mint and/or a cherry.
